Grape History: | This variety is one of the most ancient and characteristic of the North-Central Puglia, could be imported from Asia Minor (Troy) and arrived in Puglia during the Greek colonization of Puglia. |

Vinification: | 20 days prolonged maceration of the wine on its skins in stainless steel tanks. Soft pressing, fermentation in stainless steel tanks with controlled fermenting temperature at 23ºC |
