Pronunciation: “Neh – roh deeh Trow – yah”
Tasting Notes: Ruby red coloured, rich in aromas of ripe red fruits and berries. Soft mouth-feel, fresh and pleasant palate, makes up the wine’s character.
Food Pairing: Great match to cheese and roasted meat.
Serving Notes: 16-18C
Grape History: This variety is one of the most ancient and characteristic of the North-Central Puglia, could be imported from Asia Minor (Troy) and arrived in Puglia during the Greek colonization of Puglia.
Harvest: Late September
Vinification: 20 days prolonged maceration of the wine on its skins in stainless steel tanks. Soft pressing, fermentation in stainless steel tanks with controlled fermenting temperature at 23ºC
Aging: French oak barrels, stainless steel tanks and in the bottles
Bottling: During autumn, with waning moon.
Alcoholic Content: 13,5% by volume
Sugar: 2,3 g/l
Total Acidity: 5,0 g/l
Location: Coppa Castello vineyard, in the heart of San Severo DOC.
Altitude: 200-300 m above sea level
Soil: Clay and limestone
Density: 4500-5000 plants per Ha
Trimming Technique: Traditional, handmade
Structure: Espalier Trees
